American Paddlefish, also
known as "Spoonbill" because of its duckbill-like snout, is a
cartilaginous cousin to sturgeon. Paddlefish roe ranges from light
to dark steel gray, and is comparable in taste to Caspian Sea
Sevruga. A very fine yet less expensive alternative!
